Oven Fried Pork Chops

These pork chops are delicious and so easy to make. The preparation is simple enough for a weeknight meal, but you may want to make these for company too. The recipe I used was adapted from the cookbook Southern Living Homestyle Cooking.

Oven Fried Pork Chops
4 lean center cut pork loin chops
1 egg white
2 tablespoons unsweetened pineapple juice
1 tablespoon soy sauce
1/4 teaspoon ground ginger
1/4 teaspoon paprika
1/8 teaspoon garlic powder
1/3 cup Italian-seasoned bread crumbs
Vegetable cooking spray

Preheat oven to 350 degrees F. Prepare a roasting pan with a rack by spraying the rack with cooking spray.
In a shallow bowl, combine the egg white, pineapple juice, soy sauce, ginger, paprika, and garlic powder; whisk gently until combined. Dip pork chops in egg mixture, then dredge in breadcrumbs. Place chops on prepared rack in roasting pan. Bake in preheated oven for 25 minutes; turn and bake 25 more minutes or until pork chops are done. Makes 4 servings.

Whisk together an egg white, pineapple juice, soy sauce, ginger, paprika, and garlic.

Dip the pork chops in the egg mixture.

After the pork chops are dipped in the egg mixture, dredge them with bread crumbs.

Place chops on a rack in a roasting pan.

Bake for 25 minutes then turn and bake 25 more minutes, or until done.

These pork chops have the tenderness of baking, but the crunchy breading makes them taste fried.
