Red White and Blue Sweet Summer Salad

I made this colorful salad on Monday as part of our Memorial Day meal. It was a pretty addition to the ribs, potato salad, and roasted broccoli. This salad would also be great to serve for Independence Day, or just any day. This recipe comes from Green Lite Bites.

Red White and Blue Sweet Summer Salad
3 - 4 cups of fresh romaine lettuce, washed and torn
1/2 cup fresh blueberries
1/2 cup fresh strawberries, cut in small chunks
1 ounce crumbled Feta
1 tablespoon sweet poppyseed dressing

Wash, dry and prepare lettuce and fruit. Place the lettuce in a large bowl. Top with the blueberries, strawberries, and Feta. Drizzle the dressing over all. Refrigerate until ready to serve.

Fresh fruit is such a tasty and healthy way to add color to a summer salad.

The recipe calls for 1 ounce of Feta. I wasn't sure how much 1 ounce would be out of my 12 ounce container, so I weighed it.

Drizzle a tablespoon of your favorite poppyseed dressing over the salad.

I love this salad! It's so easy to put together and so delicious!

  2. I love the colors, and I bet the feta adds a nice contrast to the sweetness of the fruit and dressing. Thanks for linking up!

  3. The salad you made looks so refreshing and healthy. Perfect for this HEAT! I've been meaning to get a scale but never do. Do you like yours? What brand is it. I have no knowledge of them but they say that weighing is more accurate than measuring and in baking especially, it is important to be accurate. I had so much fun yesterday I'm exhausted today! LOL!

When I cam here everytime I attend a party, there's always like chips, mexican food, all the pizza and salad. I think Salad is great to have for parties - healthy eats! So, Really glad to find some good recipes and try. Experimenting and trying new recipe is fun to do, and everyday practice makes a perfect salad! :)
